Do the 5.7" Eagle rods have bolts or cap screws?
Cap screws allow more generous clearance.

Cap Screws, No Problem With Rod Clerance , Wondering About Any Block Isssues !

The best thing to do is a trial assembly with no rings on the pistons and I use a good, but old set of bearings. be sure to check your cam clearence too.

What Mr Bill said. You build a stroker, you do a trial build. No parts vendor can guarantee how your block is cast and machined. All you really need is the cam bearings in, the cam in, the chain on, two main bearings to hold the crank, one rod bearing, one rod, one piston. move the piston from hole to hole, turn the engine over at least two full revolutions each hole. Check for clearance at the pan rail and rear crank counterweight, all along the pan rails both sides, all along the lower edges of the cam tunnel, and between the rod shoulders and cam lobes. This takes time and care and is one of the reasons engine builders get paid good money. If you're lucky it will all fit, but maybe not. Then you start grinding.

always test fit parts when you are building a stroker.

i have eagle rotating assembly. cast crank, forged I beam rods with cap screws, and hyper pistons. u will have the clearance the block on the pan rails and the bottem of the cylinders. i didnt have to clearance the rods for the cam but i did anyways. also check out your crank thrust surfaces. mine was a tad on the rough side so i had to have it polished. if its to rough is can lead to premature bearing thurst failer

heres a link to some pics of my clearance job

last 383 I did cleared fine on the drivers side, had to notch everything on the passenger side. It was Eagle/Eagle/SRP.

I put a Scat rotating assembly in my 010 350 (out of a 71 Elco). If my memory serves me we had to "clearance" 3 out of 8. A bit of a hassle, but it runs like a "bat out of hell". I toped it off with, aluminun heads, Comp cam, edelbrock Victor Jr. and a Demon 850!
