In the trunk lid sections I want to remove/replace my weatherstripping. It looks like the weatherstripping is held on using long pieces of metal as crimps to the body? Is there more to it than that?

The crimps/lips along the inner side of the channel help to hold the weather stripping in place. The lips alone won't hold it in good enough. You'll have to glue it in with weather stripping cement as well.

Removing this rubber strip usually means ripping it out and scraping the rest with a screw driver or scraper. They are glued in, the metal strip does next to nothing as far as "holding" the rubber in.

If you do remove your old one to put in a new one, be sure to protect that channel with paint before gluing in your new one. After removing the old, there will be scratches.
