Im restoring a 66 conv. I have a new set of wedges for the doors and can't seem to find much info on them, I would like some advice on proper instalation and alingment principles, the wedges came with shims all the same thickness, any help would be appreciated. also I have installed new door rubbers they seem very tight when the doors are closed is there a way to break them in or is it just a matter of letting them settle in

i'm pretty sure you want to shim to the point where the just miss each other.
the door rubber should settle in.

That's correct. The shims should be added until ( idealy ) they 'just' barely make contact. The purpose is that when there is body flex they will come in contact and add some rigidity. BTW - on my car the drivers side required many more than the pass side.
