The neutral safety switch prevents the car from turning over if you're not in neutral or park, so if the NSS is not hooked up you would not be able to start the car.

I have had a 68 Beau with a 327 and a th350, the neutral switch was not hooked up, and it started in gear or any selection for that matter. Not the safest, but this was many years ago.
Therefore, there exists a way to have it bypassed, and the car still start.

Not a particularly safe way to operate your car. The NSS is there so you don't get careless and drive your car through your garage wall or run over some poor pedestrian who happens to be in front of your car when you start it in gear. They were designed by the car manufacturers for exactly situations like that.
Believe me when I say that most cars with the NSS out of the circuit will readily start in gear and of course will instantly be in motion whether you want them to be or not.

this is true. Took the console out to restore. I forgot that NSS works in a complete circle. When its disconnceted at one point ,the electrical current is cut off.
