When one goes bad, is there a way to tell for sure without having to remove the wheel and hub?

I have a noise that begins around 35 mph, but I was thinking that if this was a bad wheel bearing, then the noise should be constant no matter what speed I'm driving.

Thanks for any help or advice, Charles

I assume you are taking about a front bearing.
If you suspect a bearing problem, take it apart and check.
This is not a big job, you should be able to do with minimal tools and time
You can do more damage if left and continue to drive
If you need help I can talk you through it
Good Luck

If you are looking for a driving method of checking a suspect front wheel bearing take your car for a short drive at a moderate speed where its SAFE to do and steer the car from side to side repeatedly.

If you have a bad fwb the bearing will get louder as the weight of the car bias's to that side. Same for the rear except for the location of the noise.

If you hear no sound change then there is no bad bearing.
