Depends on what kind of car, what type of ignition system and what it is to be used for I'd say.
Doesn't necessarily have to be in a hot wire, a ground can be used for a kill switch in some cases.

For preventing amatures from joy riding, just hide a switch up under the dash or seat that interupts the +12V to the HEI. Of course all they need is to jump from the battery to HEI with their own wire...... Another method is a solenoid in the fuel line or relay to power electric pump with a hidden switch. Depending on carb, they get a mile or so and it dies. You can also change the START circuit to use a hidden momentary switch (behind a kickpanel for instance) to activate the starter. Even with the key, you'd have to know where it was. Pros will use a rollback or wrecker anyway, so nothing prevents that except a garage with alarm.
