Change your coolant sensor on your fan or adjust is if it adjustable to not turn on till 195-210.

I had very similar problems this past winter with my '67 El Camino and a 383 small block with aluminum heads. My big block Chevelle runs 170 with a 160 thermostat but I am okay with that.
The FIX:
- Run a HP "Balanced" thermostat, I recommend a 180 degree (use a Robert Shaw or Mr Gasket HP part)
- Adjust your thermostat to maintain 175-185 degrees
- I also had to run a non Air-Gap intake to get the mixture to properly warm up for daily driving, pleasure driving is no problem
Good Luck :D

I'd start by changing to a 160* thermostat. Get that sucker to open as soon as you can.

Your thermostat is not working correctly. Buy a new high flowing model either Robert Shaw Mr. Gasket or Mildon and use a 180 (as recommended above). 160s are toooooooo cool for proper wear and performance.
Your fans should NOT run when you are running down the road at 180. I would want the fans to come on at 190 and turn off at 185....that way when your thermostat (180) is cycling properly the fans will NOT run.
I'd start by changing to a 160* thermostat. Get that sucker to open as soon as you can.
When it's already running too cool...?

You might want to make sure the thermostat works properly. I had one stuck open on my car a couple years back and it never seemed to warm up.
