Maybe someone with a little more knowlege would help you here, but I would think that going from dark to light could be best done in steps. I would try a few light coats of medium gray then a few of light gray, then to to white. Using light coats will prevent lumping and runs, you would need to apply as many coat anyway going from black to white if not more.....that VHT paint is good stuff, I used it on the sunvisors of my '55 when I replaced the head liner (off-white) that was 7 years a go and it still looks great.
Good luck!!

Yes can be done. We went from BLACK colored reproduction dash pad, kick panels, windlace to FAWN (light tan color) on my sons's 66 Nova and I'll probably be doing the same for the 66 Chevelle SS I'm restoring since the interior will be a two-tone fawn.

We used SEM products - prepped with SEM vinyl prep & cleaner then used SEM color coat (Santa Fe color for us) to match the FAWN color. SEM is at http://www.semproducts.com and can be found at your local auto paint shop.

See my sons' 66 Nova here http://www.cardomain.com/ride/763118

If it's possible, you might be better off to locate a white, or off-white headrest first and then color it white to match the rest of your interior. You'll get a better coverage and can sell your black headrest. Then in the event you get a scratch later, it won't be an noticable. If that's not possible, you should be okay using SEM.
